Food item a day #10 (Photo credit: Wikipedia) |
From Denny: The beauty of slow food is you can forget about it for awhile after it gets going on the stove. Then you are free to run a few short errands close to the house, go grocery shopping or clean around the house.
Since I'm no fan of long hours of house cleaning like it's a Saturday marathon I clean in short spurts for 10 to 15 minutes several times a day or week, depending upon how long a project takes.
I've even educated my husband how you can load the dishwasher in the amount of time it takes for commercial TV breaks to scream at you around the corner. Fortunately, this year Congress passed a law forcing the advertisers to turn down the volume.

You can do dishes in about 2.5 to 3 minutes. Yes, we scrape excess food - especially oil or gravies into the garbage can and pre-rinse in our house. There is no sense in gumming up the drainage pipes with food residue that can grow unhealthy mold and cost you a plumber bill down the road.
Hey, if you don't get it done in that first TV ad break on the half hour show, don't worry, you can finish up on the next break. You get a little exercise too by moving off the couch and increasing your circulation. Couch potato should be listed as a health hazard the way my house loves to watch endless hours of sports and movies. :)
Oh, yeah, on to the recipe... This delicious dish uses boneless and skinless chicken breasts. The seasoning veggies are green bell pepper, onion and zucchini. Add the apple juice and it cooks on Low for 5 hours in the slow cooker. Then you add the chopped fresh apple and slivered almonds and let it cook another one to two hours on Low. To serve whip out your favorite slotted spoon to gather up the soft goodness into your favorite wrap, pita bread or a lettuce wrap.
This recipe is especially good for anyone on a low salt or low sugar diet because there isn't any other than what is locked up in the natural ingredients of chicken, the veggies and apple.
FYI Note: Be aware most grocery store chicken is injected with salt water to ward off bacterial growth and fatten it up to look more desirable. If you are on a low salt diet be sure to go somewhere like Whole Foods health food store for organic chicken that is not injected with salt water.
